Coffee Almond Fudge

Method

Put the sugar, butter & milk into a pan & bring slowly to the boil, stirring all the time. Cook gently, stirring frequently, until the mixture reaches a temperature of 240F. Remove from the heat & add the coffee essence & almonds. Beat the fudge very well until it is thick & creamy, then pour it into a greased tin. Cut it into squares when cold.

  • 1lb (400g) granulated sugar
  • 1 1/2 oz (40g) butter
  • 1/2 pt (300ml) evaporated milk
  • 2 tbsps coffee essence
  • 2-3oz (50-75g chopped & toasted almonds
