Using these simple set of instructions can make an enormous difference to the quality and taste of your coffee. Our range of roast and ground coffee has been developed to suit all coffee makers.
Select a coffee that is suitable for use in a cafetiere; this tends to be a medium or a coarse grind of coffee with a texture similar to Demerara sugar. Espresso fine ground coffee should not be used in a cafetiere. The benefit of this type of grind is that it reduces the surface area exposed to the water and ensures that the coffee has a well rounded flavour profile and is not too bitter.
Boil some freshly drawn, preferably filtered, water and pour a little into the cafetière, swirl it around to preheat the pot and then throw the water away.
Let the boiled water rest for a few seconds - boiling water scalds the coffee and will affect the flavour.
Add one rounded dessert spoonful of ground coffee per person. Adjust according to taste.
Pour on freshly boiled water and stir. Set the plunger in place, but do not push it down yet.
Allow the coffee to stand and brew for 3-5 minutes to let the flavours develop, and then depress the plunger slowly.

Select a suitable filter coffee; a medium grind coffee and boil some freshly drawn, preferably filtered, cold water.
Place your filter paper in the filter (we recommend using white, oxygen processed filter papers, as the brown filters can taint the taste)
Add one rounded dessert spoonful of ground coffee per cup. Adjust according to taste
Pour a little “Off the boil” (92°C- 96°C) water onto the coffee grounds first; this makes them swell up so that when you pour the rest of the water on, it allows the flavour to develop fully
Wait until all the water has filtered through.

Espresso coffee is the base for cappuccinos and lattes. Select a suitable espresso coffee; choose a fine grind of coffee and use freshly drawn, preferably filtered, cold water.
Fill the lower section of the stove pot with freshly drawn, filtered, cold water to just below the safety valve put the filter compartment into the lower container
Fill the filter compartment with ESPRESSO ground coffee without pressing the coffee, level the coffee off without leaving any coffee on the container edges
Screw the upper section to the lower section and bring to the boil over a heated stove until the top of the container is full
Remove the coffee maker from the heat and serve the coffee
