Pears with Coffee Syrup

Method

The coffee syrup is made by heating the coffee and sugar until little bubbles of air form on the surface.

 

Fill the core hole of the pear with crushed walnuts and put a half walnut on top of this. Place the half pears into an oven-proof dish and pour the syrup on top. Cook for 10 to 15 minutes at 175⁰C, regularly pouring syrup over the pears to keep them moist and juicy.

To serve, place 2 (lukewarm) pear-halves on each plate adding a little whipped cream on the side.

     

Ingredients

  • 200ml (7 fl oz) very strong coffee
  • 200g (7oz) caster sugar
  • A large tin of half pears in syrup
  • 40g (2oz) walnuts
  • Whipped cream for decoration
